Empty Weight Definitions
BEW is not changeable, it is fixed by design - Basic Empty Weight is the weight of the aircraft including unusable fuel, operating fluids as well as engine oil and hydraulic fluids.
OEW is changeable by changing the one or more of the following; This is the Operating Empty Weight and usually includes Flight and cabin crew as well as "consumables" for the flight , like duty free, portable water for drinking etc.
-- FA FWD, FA AFT
-- Galleys F, R
6 crew is on board - 2 x pilots and the cabin crew. @ 104kg each you get 624Kg for 6 people
You can obviously tweak the numbers as long as they balance and are workable, they should work
Start by looking in the install guide for the basic numbers and my config.

Once you understand the above you can begin tweaking the numbers to suit your needs
I use 79Kg per pax and 25Kg per bag = 104.xx Kg per passenger. This is the Simbrief default
With these values balance 998 out of a 1000 flights, perfectly.
The only time I miss it by a kilogram or two is when Simbrief rounds the wrong direction because they do not actually use exactly 104Kg per person. They have a decimal in there that they do not actually declare.
